Easy Chickpea and Chorizo Tapas

  • 120g diced chorizo or similar cured sausage
  • 1 chopped red onion
  • 400g tin of chickpeas, drained
  • 400g tin of chopped tomatoes
  • 4 sliced spring onions
  • 2 tbsp chopped parsley
  • Crusty bread, to serve
  • Heat a frying pan and fry the chorizo for a couple of minutes, or until the oils start to be released. Stir in the onion at this point, and fry for a couple of minutes more to soften.
  • Stir in the tomatoes, chickpeas and 100ml of water, then cover and simmer for 5 mins. Remove the lid, stir well and mix in the spring onions and parsley. Season liberally and serve with sliced crusty bread.
