Easy Crispy Squid

Ingredients

  • 1 tbsp cornflour
  • 2 tbsp polenta
  • 1 tsp smoked paprika
  • 200g squid rings
  • Veg oil for frying
  • Garlic mayo, to serve

Method

  • Mix the cornflour and polenta with the paprika in a bowl. Add the squid rings and mix to coat completely.
  • Heat the oil in a saucepan until sizzling temperature, then fry the squid rings in batches for 2 mins (no longer!), flipping once during frying until golden and crisp. Remove and drain on kitchen paper, then sprinkle with sea salt and serve with garlic mayo and chips.
