Ingredients
Method
- 600g peppery pork sausages
- 1 tbsp oil
- 1 crushed garlic clove
- 2 sliced onions
- 1 thinly sliced green apple
- 400g tin of chopped tomatoes with herbs
- 50ml tomato ketchup
- 50ml barbecue sauce
- 2 tbsp brown sugar
- 2 tbsp malt vinegar
- Brown rice, cooked to serve
- Preheat the oven to 180C. Fry the sausages in a frying pan until browned all over, then remove, chop into pieces and toss into a lidded casserole dish. Add the oil to the frying pan and fry the onion, garlic and apple slices until softened. Season well.
- Add the onion and apple mixture to the casserole with the sausage pieces. Stir to combine, then pour in the remaining ingredients. Mix again, then cover the casserole and bake in the oven for 30 mins. Serve hot with brown rice or whatever steamed greens you fancy.
