Easy Falafel Burgers

  • 400g tin of chickpeas, drained
  • 1 chopped red onion
  • 1 chopped garlic cloves
  • Handful of chopped parsley
  • 1 tsp each ground cumin and coriander
  • ½ tsp harissa paste
  • 2 tbsp seasoned flour
  • 2 tbsp oil
  • Buns, salsa and salad, to serve
  • Add the drained chickpeas to a food processor with the onion, parsley, spices, garlic, harissa paste, flour and a pinch of salt. Blend until fairly smooth, then form into burger patties with damp hands.
  • Heat the oil in a frying pan and fry the patties for 3 mins on each side, or until golden and slightly crisp. Serve in burger buns or pitta pockets, with green salad and a spicy salsa. Yum!
