Easy Falafel Burgers
- 400g tin of chickpeas, drained
- 1 chopped red onion
- 1 chopped garlic cloves
- Handful of chopped parsley
- 1 tsp each ground cumin and coriander
- ½ tsp harissa paste
- 2 tbsp seasoned flour
- 2 tbsp oil
- Buns, salsa and salad, to serve
- Add the drained chickpeas to a food processor with the onion, parsley, spices, garlic, harissa paste, flour and a pinch of salt. Blend until fairly smooth, then form into burger patties with damp hands.
- Heat the oil in a frying pan and fry the patties for 3 mins on each side, or until golden and slightly crisp. Serve in burger buns or pitta pockets, with green salad and a spicy salsa. Yum!
