Ingredients
Method
- 12 beef meatballs
- 1 chopped onion
- 1 tsp ground cumin
- 400g tin of chopped tomatoes with herbs
- Handful of pitted black olives
- 10 mint leaves, torn
- 100ml beef stock
- 50g crumbled feta
- Add a splash of oil to a frying pan and cook the meatballs for 8 mins or until browned all over. Toss in the onion and fry for 3 mins more.
- Stir the tomatoes, cumin, olives, mint leaves and stock into the pan and cook for 5 mins to thicken. Season well, then serve with rice and plenty of crumbled feta scattered over the top.
