Easy Harissa Salmon Pilaf
- 2 tbsp olive oil
- 1 sliced onion
- 1 tsp each ground coriander and turmeric
- 2 tbsp harissa
- 500g cooked brown rice
- 2 salmon fillets, poached
- 40g chopped pistachios
- 70g pomegranate seeds
- 50g raisins
- Bunch of parsley, chopped
- Heat the oil in a casserole and add the onion to fry for 10 mins, or until golden. Stir in the spices and harissa paste, fry for 1 min, then stir in the rice and cook for 5 mins more. Flake the salmon and stir into the rice, then finish with the pomegranate, pistachios, nuts, and parsley. Easy peasy!
