Easy Lamb and Mushroom Ragu

  • 2 tbsp olive oil
  • 150g soffritto mix
  • 250g brown mushrooms, chopped
  • 500g lamb mince
  • 150ml red wine
  • 400g tin of chopped tomatoes with Italian herbs
  • 45g smoked tomato paste
  • 1 tsp porcini powder
  • Cooked pasta, to serve
  • Crumbled feta, to serve
  • Warm a large saucepan on a medium heat, then cook the soffritto mix in the oil for 5 mins to soften. Add the lamb mince to the pan and cook for 3 mins, stirring all the time, until browned all over. Pour in the wine and leave to bubble for 3 mins, then add some salt and pepper and stir to combine.
  • Add the tomatoes, tomato paste, chopped mushrooms and porcini powder to the lamb mixture. Bring to a simmer, then cook for 20 mins to thicken the sauce. Season again to taste, then serve with cooked pasta and some crumbled feta over the top.
