Easy One Pot Cassoulet
- 1 diced onion
- 2 diced carrots
- 2 crushed garlic cloves
- 100g smoked bacon lardons
- Glass of red wine
- 400g tin of cannellini beans, drained
- 400g tin of chopped tomatoes
- 200ml chicken stock
- Sprig of thyme
- 1 bay leaf
- 1 tbsp olive oil
- 2 roast duck legs or grilled sausages, to serve (optional)
- Heat the olive oil in a casserole and cook the onion, carrot and bacon lardons for 5 mins. Tip in the garlic and stock, and cook for another 3 mins or so.
- Add the wine to the casserole along with the chopped tomatoes, herbs and beans. Simmer gently for about 25 mins or until the sauce has reduced and thickened, then season with salt and pepper and serve with roast duck legs or grilled sausages, if you fancy.
