Easy Peasy Minestrone



  • 1 tbsp olive oil
  • 1 chopped onion
  • 2 chopped carrots
  • 3 chopped celery stalks
  • 2 chopped garlic cloves
  • 2 tbsp tomato puree
  • 400g tin of chopped tomatoes
  • 1.2 litres of veg stock
  • 400g tin of cannellini beans
  • 100g dried spaghetti, broken
  • 1⁄4 green cabbage, shredded
  • Salt and pepper
  • Fry the onion, carrots, and celery in a large saucepan with some salt and pepper for about 10 mins to soften. Add the garlic, and fry for another minute, then stir in the tomato puree and cook for 3 mins more.
  • Tip in the stock and tinned tomatoes. Cover with the lid, and simmer for 15 mins. Add the beans and pasta, cook for 10 mins, then add the cabbage and cook for 2 mins more. Season well, and serve.
