Easy Poached Sea Bass in Cream Sauce Recipe

What you'll need:

  • 1 tbsp olive oil
  • ½ large potato, cut into cubes
  • 100ml white wine
  • 50ml chicken stock
  • 1 tomato, deseeded and chopped
  • 1 fillet of seabass, cut into serving pieces
  • 100ml double cream
  • 2 tsp freshly chopped chives
  • Salt and pepper

Method

First

Heat up the olive oil in a pan, and gently fry the potato cubes for about 7 minutes. You want them nicely golden and starting to crisp up. Chuck in the white wine, turn up the heat, and reduce by half.

Second

Add to the pan the tomato, the chicken stock, and the cream, and bring to a steady simmer. Place the fish pieces into the pan, and cook for about 2 minutes (or until cooked through). Season well, gently stir in the chives, and serve in a bowl with some crusty bread.
