Ingredients
Method
- 1 chopped onion
- 2 crushed garlic cloves
- 1 chopped red chilli
- Splash of olive oil
- 2 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp chilli powder
- 200g rinsed quinoa
- 600ml veg stock
- 400g tin of chopped tomatoes
- 400g tin of black beans, drained
- 1 sliced avocado
- Chopped coriander
- Fry the onion, chilli and garlic in a splash of olive oil until softened. Add the spices, tip in the quinoa, tomatoes, beans and stock, and season well.
- Cover the pan and simmer for 30 mins, or until the quinoa is tender and the sauce has thickened. Top with sliced avocado and chopped coriander, and serve. Delicious!
