  • 200g red lentils
  • 1⁄2 tsp turmeric
  • 2 peeled garlic cloves (whole)
  • 250ml coconut milk
  • 25g butter
  • 1 tbsp veg oil
  • 10 curry leaves
  • 1 tsp mustard seeds
  • Pinch of chilli flakes
  • 1 red onion, finely sliced
  • Wash your lentils at least twice, to remove the excess starch. Once done, put them in a big saucepan, and cover with 500ml of water. Add the turmeric and garlic, and bring up to the boil, then simmer for 15 minutes. Stir in the coconut milk, cook for a further 5 minutes, then season to taste.
  • In a small frying pan, melt the butter and lightly fry the curry leaves. After a minute, add the mustard seeds and chilli flakes, then add the sliced onion and fry until golden. Add this mixture to the dal, stir well, and serve hot with some flatbreads.
