Ingredients
Method
- 200g flour
- 2 tsp baking powder
- Pinch of salt
- 2 beaten eggs
- 200ml milk
- 8 sliced spring onions
- 2 tbsp chopped parsley
- Pinch of smoked paprika
- ½ lemon, zest only
- 15g butter
- Garlic mayo, to serve
- Combine the flour, baking powder, salt and paprika in a mixing bowl. Make a well in the middle and add the egg. Whisk together and gradually add the milk, continuing to whisk until you have a smooth batter. Mix in the lemon zest, spring onions and parsley.
- Heat half the butter in a non-stick frying pan. Ladle 4 tbsp of the batter into the pan and cook for 2 mins on each side, or until golden. Remove and repeat with the remaining batter, then serve the fritters warm as part of a tapas spread with garlic mayo.
