Easy Tex-Mex Black Bean Soup
- 2 tsp oil
- 1 chopped onion
- 1 chopped red pepper
- 2 chopped garlic cloves
- 2 tsp chilli powder
- 1 tsp each ground coriander and cumin
- 400g tin of chopped tomatoes
- 400g tin of black beans
- 1 tsp veg bouillon powder
- Fry the onion and pepper in the oil for 10 mins to soften, then stir in the garlic and spices. Tip in the tomatoes and beans with about half their liquid, then add half a canful of water and the bouillon powder. Season well and simmer for 15 mins, then serve with a dollop of guacamole on top.
