Easy Vegan Burger
- ½ onion, finely chopped
- ¼ red capsicum, chopped
- Handful of parsley
- 400g tin of chickpeas, drained
- 2 tsp garam masala
- 1 tbsp tomato purée
- 2 tbsp flour
- 1 tbsp couscous
- Oil for frying
- Burger buns and all your favourite salads and sides, to serve
- Chuck the onion, capsicum, parsley, and most of the chickpeas in a food processor and blitz to a coarse paste. Mash in the remaining chickpeas along with the garam masala, purée, flour, and couscous. Season liberally, and shape the mix into 4 patties. Let them rest in the fridge for at least 30 mins, then fry in a splash of oil until golden and crisp on both sides. Serve in buns, with whatever else you fancy!
