Ingredients
Method
- 3 tbsp olive oil
- 2 slices of day old bread, crusts removed, cubed
- 1 romaine lettuce heart, sliced
- 30g parmesan, shaved
- Salt and pepper
- 6 tbsp may
- 1.5 tbsp Dijon mustard
- 2 tbsp grated parmesan
- 1⁄2 garlic clove, crushed
- A few drops of Worcestershire sauce
- Make your croutons by heating the oil in a frying pan, and frying the bread cubes for a few minutes until golden all over. Remove with a slotted spoon, and drain on kitchen paper. Season liberally.
- Make the dressing by putting all the ingredients in a small bowl and mixing with a fork in 1-2 tbsp water. Toss the lettuce leaves in a serving bowl with the dressing, chuck in the croutons and shaved parmesan, and serve!
