Easy Vietnamese Pork and Noodle Soup Recipe

What you'll need

  • 2 pork ribs
  • 1 tbsp veg oil
  • ½ red chilli, chopped
  • 1 garlic clove, crushed
  • 150ml beef stock
  • 100g egg noodles, cooked to pack instructions
  • 2 tsp sesame oil
  • Handful of chopped coriander to serve

Time: 30 minutes

Method

First

Heat the oil in a large pan, and season the ribs well with plenty of salt and pepper. Cook the ribs for about 3 minutes on each side, or until nicely golden brown.

Second

Toss in the chilli and the garlic, and cook for a further minute. Pour in the stock, bring up to the boil, and then simmer for 10 minutes to cook the ribs all the way through.

Third

Add the cooked noodles along with the sesame oil, and stir together to make a broth-like soup. Serve in a bowl with a sprinkling of chopped coriander, and enjoy.
