Fennel and Apple Salad



  • 175g mixed rocket, spinach and watercress
  • 1 large fennel bulb, thinly sliced
  • 1 apple, thinly sliced
  • 2 tbsp dill, finely chopped
  • For the Dressing
  • ½ orange, zest grated
  • 1.5 tbsp orange juice
  • 3 tbsp olive oil
  • Drizzle of honey
  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 2 tsp poppy seeds
  • Simply mix all of the dressing ingredients together in a jam jar or small bowl, and season. Combine the leaves, apple, fennel, and dill in a serving bowl, and drizzle with the dressing before tossing and serving.
