Fennel and Apple Salad
- 175g mixed rocket, spinach and watercress
- 1 large fennel bulb, thinly sliced
- 1 apple, thinly sliced
- 2 tbsp dill, finely chopped
- For the Dressing
- ½ orange, zest grated
- 1.5 tbsp orange juice
- 3 tbsp olive oil
- Drizzle of honey
- 1 tsp Dijon mustard
- 1 tbsp white wine vinegar
- 2 tsp poppy seeds
- Simply mix all of the dressing ingredients together in a jam jar or small bowl, and season. Combine the leaves, apple, fennel, and dill in a serving bowl, and drizzle with the dressing before tossing and serving.
