Festive Sticky Red Cabbage



  • 1 tbsp olive oil
  • 1 shredded red cabbage
  • 1 thumb-sized piece of ginger, finely chopped
  • 2 sliced onions
  • 1 tsp ground allspice
  • 1 tbsp black mustard seeds
  • 100g golden caster sugar
  • 150ml red wine vinegar
  • Heat the oil in a large saucepan and add the onions, ginger, spices and cabbage, and cook for 5 mins.
  • Scatter in the sugar and pour in the vinegar. Cover the pan and cook on low for 10 mins, then remove the lid and turn the heat up to medium. Simmer for 20 mins, stirring occasionally, until all the liquid has evaporated and the cabbage is sticky and soft. Serve in a large bowl as a delicious festive side dish.
