Ingredients
Method
- 325g courgettes
- 2 sliced spring onions
- ½ bunch each of chopped mint, parsley and dill
- 4 eggs
- 75g grated halloumi
- 100g feta, crumbled
- 2 grated garlic cloves
- 4 tbsp olive oil
- 80g flour
- 1 tsp baking powder
- 1 tbsp each nigella and sesame seeds
- Preheat the oven to 200C. Grate the courgettes into a clean tea towel, then wrap and squeeze out as much liquid as you can. Add to a colander to drain further, and set aside. Meanwhile, add all the rest of the ingredients to a bowl, stir in the courgettes, season well and mix to combine.
- Line a 25cm round oven dish with baking paper and drizzle with olive oil. Heat the dish for 5 mins, then add the courgette mixture to the dish. Sprinkle with more seeds and bake for 35 mins. Leave to rest for 5 mins, then serve with a green salad.
