Feta, Lime and Sweetcorn Salad
- 1 large spring onion, finely chopped
- 1 tbsp olive oil
- 200g sweetcorn
- 1 lime, zest and juice only
- Small bunch of coriander, chopped
- 80g feta, crumbled
- Dried chilli flakes
- Gently fry the spring onion in the olive oil until softened, then stir in the sweetcorn and cook for 2 mins. Add the lime zest and juice, the coriander and plenty of salt and pepper.
- Tip the sweetcorn mixture into a bowl and sprinkle with the crumbled feta. Scatter with chilli flakes, and serve with more coriander on top.
