  • 450g baby spinach leaves
  • 450g quality feta, cubed
  • 8 tsp pine nuts, lightly toasted
  • 1 sliced red onion
  • Dash of red wine vinegar
  • Olive oil, to drizzle
  • Wash the spinach and place alongside the feta, onion, and pine nuts in a salad bowl. Sprinkle with vinegar, drizzle with oil, and toss to coat. Serve alongside grilled lamb or chicken.
