Feta, Spinach, and Pine Nut Salad
- 450g baby spinach leaves
- 450g quality feta, cubed
- 8 tsp pine nuts, lightly toasted
- 1 sliced red onion
- Dash of red wine vinegar
- Olive oil, to drizzle
- Wash the spinach and place alongside the feta, onion, and pine nuts in a salad bowl. Sprinkle with vinegar, drizzle with oil, and toss to coat. Serve alongside grilled lamb or chicken.
