Fettuccine with Melted Brie
- 300g brie, cut into cubes
- 2 crushed garlic cloves
- 6 tbsp olive oil
- 300g halved cherry tomatoes
- Large handful of chopped basil
- ½ lemon, grated zest and juice only
- 400g fettuccine
- Put the garlic, oil, tomatoes, basil, lemon zest and juice and brie in a large bowl. Season, mix together and leave to sit for 10 mins.
- Cook the pasta until al dente in salted boiling water, then drain. Toss the hot pasta with the brie mixture, and serve immediately.
