For the rice
- ½ onion, cut into wedges
- 1 tbsp olive oil
- 1 chopped garlic clove
- 1 tsp turmeric
- ½ tsp crushed coriander seeds
- 200g basmati rice
- Salt and pepper
- 300ml boiling water
For the asparagus
- A bunch of asparagus
- 2 tbsp olive oil
- Salt and pepper
Time: 30 mins
Get your oven preheated to 180C. While this is hotting up, work on your rice. Take a big frying pan, and gently fry the onion and garlic together in a little oil until softened and translucent. Add the spices, stir, then tip the rice into your pan and mix well to coat the grains in the oil and spice. Pour in the water, turn up the heat, and cook the rice for 10-12 minutes or until tender. Season well.
While the rice is cooking, you can make your roasted asparagus. Drizzle the veg with olive oil, and season well with salt and pepper. In a griddle pan, start cooking the asparagus until they start to colour, then stick the pan in the oven and roast for 7 minutes. Serve the asparagus over the cooked rice, and enjoy.
