Ingredients
Method
- 1 roasted red capsicum from a jar, sliced
- ¼ cucumber, sliced
- 1 sliced garlic clove
- Handful of chickpeas from a tin, drained
- 1 tbsp olive oil
- Handful of pitted olives
- ½ lemon, juice only
- Salt and pepper
- For the Feta
- 25g flour
- 2 tsp sesame seeds
- 1 egg, beaten
- 110g feta cheese, sliced into 2 chunks
- 4 tbsp olive oil, to fry
- Squeeze of lemon
- Make the salad by combining all the ingredients in a bowl and seasoning well. For the fried feta, mix the flour, sesame seeds, and egg in a bowl. Dip the feta pieces in the mixture and coat well, then fry for 2-3 mins in oil, turning once, until golden all over. Drain on kitchen paper, place on top of the salad, and squeeze some lemon over the top.
