Fried Feta Salad

  • 1 roasted red capsicum from a jar, sliced
  • ¼ cucumber, sliced
  • 1 sliced garlic clove
  • Handful of chickpeas from a tin, drained
  • 1 tbsp olive oil
  • Handful of pitted olives
  • ½ lemon, juice only
  • Salt and pepper
  • For the Feta
  • 25g flour
  • 2 tsp sesame seeds
  • 1 egg, beaten
  • 110g feta cheese, sliced into 2 chunks
  • 4 tbsp olive oil, to fry
  • Squeeze of lemon
  • Make the salad by combining all the ingredients in a bowl and seasoning well. For the fried feta, mix the flour, sesame seeds, and egg in a bowl. Dip the feta pieces in the mixture and coat well, then fry for 2-3 mins in oil, turning once, until golden all over. Drain on kitchen paper, place on top of the salad, and squeeze some lemon over the top.
