Fried Rice with Crab and Leeks

  • 1 chopped leek
  • 1 tbsp oil
  • 4 grated garlic cloves
  • 2 tbsp grated ginger
  • 1 tbsp sugar
  • 1.5 tbsp soy sauce
  • 2 tsp fish sauce
  • 1.5 tbsp sriracha
  • 500g cooked basmati rice
  • 2 beaten eggs
  • 100g white crab meat
  • ½ lime, juice only
  • Chopped coriander
  • Fry the leek, garlic and ginger in the oil for a couple of mins to soften. Meanwhile, mix the sugar, fish sauce, soy sauce and sriracha in a bowl, then add the pan with the cooked rice and fry for 4 mins. Make a well in the centre and add the eggs, leave to set for 3 mins, then scramble into the rice.
  • Fold the crab meat into the rice and mix in the lime juice. Check for seasoning, then serve scattered with coriander and a squirt of sriracha over the top.
