Fried Rice with Crab and Leeks
- 1 chopped leek
- 1 tbsp oil
- 4 grated garlic cloves
- 2 tbsp grated ginger
- 1 tbsp sugar
- 1.5 tbsp soy sauce
- 2 tsp fish sauce
- 1.5 tbsp sriracha
- 500g cooked basmati rice
- 2 beaten eggs
- 100g white crab meat
- ½ lime, juice only
- Chopped coriander
- Fry the leek, garlic and ginger in the oil for a couple of mins to soften. Meanwhile, mix the sugar, fish sauce, soy sauce and sriracha in a bowl, then add the pan with the cooked rice and fry for 4 mins. Make a well in the centre and add the eggs, leave to set for 3 mins, then scramble into the rice.
- Fold the crab meat into the rice and mix in the lime juice. Check for seasoning, then serve scattered with coriander and a squirt of sriracha over the top.
