Ingredients
Method
- 2 tbsp olive oil
- 1⁄2 lime, zest and juice
- Pinch of chilli flakes
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp veg oil
- 150g tofu, cut into cubes
- 2 tbsp veg oil
- 1⁄4 onion, sliced
- 1 crushed clove of garlic
- 1⁄4 red capsicum/pepper, chopped
- Handful of spinach
- 150g cooked rice
- For the tofu, combine all of the ingredients (except the tofu and veg oil) in a bow, and mix well. Add the tofu, coat in the mixture, and leave to marinate for 20 minutes. When ready, heat up a wok and fry the tofu in veg oil for 10 minutes, or until golden all over.
- Make the rice by heating the oil in the pan, and frying the garlic and onions for 3 minutes to soften. Chuck in the capsicum/pepper, fry for 3 minutes, then add the spinach, the rice, and the reserved marinade from the tofu. Cook for 3 minutes, then serve with the marinated tofu on top.
