Gammon Steaks with Papaya Salsa

  • 100g cubed papaya
  • 1 lime, zest and juice
  • ¼ red onion, finely chopped
  • 2 x 180g gammon steaks
  • ½ tbsp olive oil
  • Coconut rice, to serve
  • Make the salsa by mixing the papaya, lime zest and juice and red onion in a bowl with a pinch of sea salt flakes. Combine with a wooden spoon, then set aside.
  • Heat a large griddle pan on a high heat. Brush the gammon steaks with oil and season liberally with black pepper, then griddle for 3-4 mins on each side. Serve with plenty of the salsa and a heap of coconut rice.
