Garlic and Herb Moreton Bay Bugs

  • 4 Moreton Bay bugs, split lengthways
  • Olive oil to drizzle
  • 100g butter
  • 1 tbsp chopped parsley
  • 1 tsp chopped thyme
  • 1 tsp chopped oregano
  • 1 crushed garlic clove
  • Preheat the barbecue to medium-high. Mix the butter, herbs and garlic in a bowl until combined and season well. Cover with plastic wrap and leave in the fridge to chill until ready to use.
  • Place the bugs on a tray (cut side up) and drizzle with salt, pepper and olive oil. Place the bugs, shell side down, onto the barbecue and cook - covered - for 5-6 mins or until almost cooked through. Turn the bugs over and cook them flesh side down on the barbecue for a minute or so, or until lightly charred. Brush the flesh with liberal amounts of herb butter, then serve with more butter for drizzling and some lemon wedges for squeezing.
