- 1 clove of garlic, chopped
- 25g butter
- 1 tbsp chopped coriander
- 6 green-lipped mussels, cleaned, one shell removed
- 75g fresh breadcrumbs
- Salt and pepper
- ½ lime, cut into wedges
- Preheat the oven to 200C. Mix together the butter, garlic, and coriander in a small bowl.
- Place the mussels on a baking tray. Divide the butter between the mussels, sprinkle over the breadcrumbs, and season well with salt and pepper. Bake in the oven for 5 minutes. Serve on a warm plate sprinkled with coriander and topped with lime wedges.
