Garlic Mushroom Spaghetti



  • 2 tbsp olive oil
  • 250g brown mushrooms, sliced
  • 1 sliced garlic clove
  • Small bunch of parsley
  • 1 celery stalk, chopped
  • 1 onion, chopped
  • 400g tin of chopped tomatoes
  • ½ red chilli, chopped
  • 300g spaghetti
  • Heat 1 tbsp of oil in a frying pan, and fry the mushrooms for 3 mins until golden. Add the garlic and fry for another minute, then tip the lot into a bowl with the chopped parsley. Add the celery and onion to the pan with a splash of oil, and fry for 5 mins to soften.
  • Stir in the tomatoes, chilli, and some seasoning, and bring to a simmer for 10 mins to thicken. Meanwhile, boil the spaghetti in salted water until al dente, and drain. Toss the pasta in with the sauce, top with your garlic mushrooms, and serve.
