Garlic Toast with Goats’ Cheese
- 2 heads of garlic
- Olive oil
- 3 sprigs of thyme
- Salt and pepper
- 1 round of goats’ cheese
- 1 ciabatta
- Lettuce, to serve
- Prosciutto, to serve
- Preheat the oven to 120C. Place the garlic bulbs in an oven dish, drizzle with olive oil, and season with salt, pepper, and thyme. Roast for an hour.
- Squeeze the soft garlic from the skins into a small bowl. Add enough olive oil to make a paste, and season well. Slice the goats’ cheese thinly.
- Cut the bread in half and grill to lightly toast, then spread with the garlic paste. Pop the cheese on top, and grill to melt. Serve with lettuce and prosciutto slices.
