Ginger, Avo, and Radish Rice Bowl

  • 150g brown rice
  • 5cm piece of ginger, peeled
  • 5 radishes, quartered
  • 1.5 tbsp soy sauce
  • 1 tsp apple cider vinegar
  • 4 tbsp mixed seeds
  • 4 tbsp fresh coriander, chopped
  • 1 avocado
  • Cook the rice in about 250ml of water until tender and nutty, and the water has been absorbed. Meanwhile, shave the ginger with a veg peeler into very fine strips.
  • Once the rice is cooked, spoon into a mixing bowl. Add the soy and the vinegar and toss well, then add in the ginger, radishes, and seeds. Stir most of the chopped coriander into the mix, then divide between two bowls and top with sliced avocado. Dress with the remaining coriander and a little more soy sauce, and enjoy.
