Goat’s Cheese and Roast Garlic Bruschetta
- 2 whole heads of garlic
- Olive oil
- 3 thyme sprigs
- 1 goat’s cheese round
- 1 ciabatta
- Lettuce and prosciutto, to serve (optional)
- Preheat the oven to 120C. Place the heads of garlic in an oven dish and drizzle with olive oil. Season with salt, pepper and freshly chopped thyme, then roast for an hour. Once very soft, squeeze the garlic from the skin into a bowl and mash with olive oil and more seasoning.
- Slice the goat’s cheese and cut the ciabatta in half lengthways. Grill the bread until char-lined, then spread with the garlic paste and top with the goat’s cheese. Grill again until the cheese is melted and bubbling. Serve with lettuce leaves and sliced prosciutto, if you fancy.
