- 2 whole heads of garlic
- Olive oil for drizzling
- 2 sprigs of fresh thyme
- Salt and pepper
- 1 round of goat’s cheese
- 1 ciabatta
- Rocket, to serve
- Prosciutto, to serve (optional)
- Preheat the oven to 120C. Arrange the garlic heads in an oven dish, and drizzle with olive oil and season with salt, pepper, and thyme. Roast in the oven for an hour, or until very soft. Squeeze the garlic out of the skins into a small bowl. Add some olive oil, and mash with seasoning to make a thick paste.
- Slice some goat’s cheese thinly, and cut the ciabatta in half lengthways. Grill until toasted, then spread the slices with the garlic paste and cover with sliced goat’s cheese. Grill until melted, then top with rocket and prosciutto.
