Grapefruit and Crispy Pork Salad

  • 2 tbsp veg oil
  • 500g pork mince
  • 300g fine rice noodles
  • 1 red grapefruit, peeled and chopped
  • 1 gem lettuce, ½ shredded, ½ leaves separated
  • 1 sliced cucumber
  • For the Dressing
  • 1 lime, zest and juice
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 crushed garlic clove
  • Pinch of chilli flakes
  • Heat the oil in a wok and add the pork. Season well and fry for 10 mins, or until browned and crisp, then set aside. Meanwhile, cook the noodles according to packet instructions and set aside also.
  • Mix the dressing ingredients together in a small bowl, then add the lettuce, grapefruit pieces, cucumber, cooked pork mince and noodles to a large bowl. Drizzle in the dressing, toss well to coat, then sprinkle with chilli flakes and perhaps some chopped parsley or coriander to serve.
