Ingredients
Method
- 2 pittas
- 3 tsp olive oil
- 1 tsp dried oregano
- 1 red onion, cut into wedges
- 400g tin of butter beans, drained
- 2 courgettes, halved and sliced
- 100g cherry tomatoes
- 20g black olives, halved
- 100g feta, cut into chunks
- 1 lemon, cut into wedges
- Preheat the oven to 220C. Cut the pittas into triangles, pop onto a baking tray and drizzle with 1 tsp of oil and the oregano. Season, toss to combine, and bake for 10 mins until golden. Remove from the tray and set aside, and add the onion wedges, courgettes, and beans. Toss again, season, and roast for 10 mins.
- Toss in the olives and tomatoes, and scatter with the feta. Roast for 10 more minutes, then scatter with your pitta chips and squeeze over some lemon. Serve immediately.
