Ingredients
Method
- 1 tbsp olive oil
- 1 chopped onion
- 3 chopped garlic cloves
- 1 tbsp tomato puree
- 2 x 400g tins of chopped tomatoes
- ½ tsp cinnamon
- Pinch of dried oregano
- 600g large butter beans, drained
- 125g feta, crumbled
- Chopped parsley
- Preheat the oven to 180C. Heat the oil in a casserole and cook the onion and garlic with some seasoning for 10 mins. Stir in the tomato puree, cook for a minute, then add the tomatoes, oregano, cinnamon and beans with 250ml boiled water and some seasoning. Pop in the oven for 30 mins until thickened, then top with crumbled feta and parsley, and serve.
