  • 2 pittas
  • 3 tsp olive oil
  • 1 tsp dried oregano
  • 1 sliced red onion
  • 400g tin of white beans, drained
  • 2 zucchinis, halved and sliced
  • 100g cherry tomatoes on the vine
  • 20g pitted kalamata olives
  • 100g quality feta, in large chunks
  • 1 lemon, cut into wedges
  • Preheat the oven to 220C. Cut the pittas into triangles and drizzle with 1 tsp of oil and half the oregano. Season with salt and pepper, toss to combine, then bake for 10 mins or until crisp. Remove from the baking tray, set aside, and replace with the beans, zucchini and onion wedges. Season and roast for 10 mins.
  • Toss the olives and tomatoes into the mixture and scatter the feta over the top. Roast for 10 mins more, then add a good squeeze of lemon and serve with the pitta chips. Perfect!
