  • 2 quality pittas
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 onion, cut into wedges
  • 400g tin of butter beans, drained
  • 2 zucchini, halved and sliced
  • 100g cherry tomatoes
  • 20g green olives, halved
  • 100g feta, cut into chunks
  • 1 lemon, cut into wedges
  • Preheat the oven to 220C. Cut the pittas into smaller triangles, drizzle with 1 tsp of oil, and place on a baking tray. Scatter with half the oregano and some black pepper, toss to combine, then bake for 10 mins until crunchy. Remove from the tray, and add the onion wedges, beans, and zucchini in their place. Coat with the rest of the oregano and oil, season, and cook for 10 mins.
  • Toss in the olives and tomatoes, and scatter the feta on top. Roast for 10 mins more, then scatter with the pitta chips and drizzle with fresh lemon juice. Serve immediately.
