Time: 20 minutes
Kick this delicious recipe off by heating your butter and oil in a large saucepan until slightly foaming. Fry the asparagus tips for a couple of minutes, then remove and set aside for later.
Add the garlic, shallots, and asparagus stalks, and soften for 5-10 minutes in the pan. Throw in all the spinach, stir well, and then add the stock along with some seasoning. Bring it up to the boil, then take off the heat and blitz well until smooth.
If the soup is a little too thick, loosen it up a bit with some hot water. Season again to taste, and serve with the asparagus tips scattered over the top with a drizzle of olive oil, and some crusty sourdough bread. Delicious!
