Green Bean, Fish and Coconut Curry

  • 1 chopped red onion
  • 20g chopped ginger
  • 3 garlic cloves
  • 2 tbsp curry powder
  • 10g chopped coriander
  • 1 tbsp veg oil
  • 400g tin of light coconut milk
  • 500g frozen white fish fillets
  • 500g frozen green beans
  • 1 lime, juice only
  • Cooked basmati rice, to serve
  • Blitz the onion, garlic, ginger, curry powder and half the coriander in a blender with a splash of water to make a paste. Heat the oil in a large pan and fry the curry paste for 3 mins, then add the coconut milk and some seasoning and bring to a simmer.
  • Nestle the fish into the sauce along with the green beans, then cover and simmer for 10 mins. Stir, remove the lid and cook for 5 mins more, then add some lime juice and check the seasoning. Serve with cooked rice or flatbreads, and enjoy.
