Green Bean, Fish and Coconut Curry
- 1 chopped red onion
- 20g chopped ginger
- 3 garlic cloves
- 2 tbsp curry powder
- 10g chopped coriander
- 1 tbsp veg oil
- 400g tin of light coconut milk
- 500g frozen white fish fillets
- 500g frozen green beans
- 1 lime, juice only
- Cooked basmati rice, to serve
- Blitz the onion, garlic, ginger, curry powder and half the coriander in a blender with a splash of water to make a paste. Heat the oil in a large pan and fry the curry paste for 3 mins, then add the coconut milk and some seasoning and bring to a simmer.
- Nestle the fish into the sauce along with the green beans, then cover and simmer for 10 mins. Stir, remove the lid and cook for 5 mins more, then add some lime juice and check the seasoning. Serve with cooked rice or flatbreads, and enjoy.
