Ingredients
Method
- 400g linguine
- 400g blanched green beans
- 4 tbsp olive oil
- 2 crushed garlic cloves
- 1 lemon, zest and juice
- 2 handfuls of mixed green herbs, e.g parsley, chervil, tarragon etc, chopped
- 100g grated parmesan
- Cook the pasta in boiling salted water until al dente, then drain and reserve a cup of the cooking water. Meanwhile, heat the oil in a frying pan and toss in the beans, garlic, lemon juice and zest, and some seasoning. Fry for 1 minute, then remove from the heat.
- Add the cooked pasta to the pan with the fresh herbs and the parmesan. Toss everything together, and loosen with a splash of the pasta water. Serve in bowls with more cheese and herbs on top - delicious!
