Green Goddess Chowder with Prawns

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 chopped celery stalk
  • 1 clove of garlic
  • 300g peas
  • 200g shredded kale
  • 2 chopped potatoes
  • 1 chicken or veg stock cube
  • 100g cooked prawns
  • Heat the oil in a saucepan, and add the celery and onion to cook for 5 mins. Add the garlic, cook for a minute more, then stir in the kale, peas, and potatoes, plenty of seasoning, and 750ml of water with the stock cube crumbled in. Bring to the boil and simmer for 12 mins. Tip about ¾ of the mixture into a food processor and whizz until smooth, then pour the mixture back into the pan and add half the prawns. Divide between bowls, and serve with the rest of the prawns on top.
