Green Mango and Herb Salad with toasted coconut

Ingredients

  • 2 firm green mangoes, peeled and julienned
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • Large handful of fresh mint
  • Large handful of fresh coriander
  • 2 tbsp toasted coconut flakes
  • 2 tbsp roasted peanuts, roughly chopped
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp caster sugar
  • Juice of 1 lime
  • 1 red chilli, thinly sliced
  • Whisk together soy sauce, rice wine vinegar, sesame oil, sugar and lime juice to make the dressing.
  • Combine green mango, cucumber and carrot in a large bowl. Pour over most of the dressing, toss well, then fold in the mint and coriander.
  • Transfer to a serving platter and scatter over peanuts, coconut flakes and chilli. Drizzle with remaining dressing just before serving.
