Griddled Pork and Apple Salad
- 1 pork chop
- 1⁄2 apple, cored and chopped
- 25g cheddar, grated
- 25g raisins
- 3 tbsp fresh parsley
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- 1 tsp sesame seeds
- Griddle the pork chop for about 4 minutes on each side, or until cooked through and slightly charred. Remove from the pan, and allow to rest for 5 minutes.
- Mix together the apple, cheese, raisin, and chopped parsley, then slice the pork, and mix the salad together. Dress with the vinegar, olive oil, and sesame seeds, and serve with the meat still warm.
