Grilled Broccoli and Walnut Penne

  • 1 head of broccoli, chopped into small pieces
  • 3 tsp olive oil
  • 150g penne
  • 2 crushed garlic cloves
  • 1 tbsp chopped walnuts
  • Pinch of chilli flakes
  • ½ lemon, zest and juice
  • Heat the grill to high. Pop the broccoli onto a baking tray, drizzle with a tsp of olive oil, then season liberally and toss together. Grill for about 10 mins - you want it vibrant green, crispy, and a bit charred. Cook the pasta in salted water until al dente, then drain and reserve a bit of the cooking water.
  • Heat 2 tsp of oil in a frying pan, and fry the garlic, chilli, and walnuts for a couple of minutes until golden and aromatic. Tip the pasta into the pan with the broccoli, lemon zest and juice, and a bit of the cooking water to loosen things up. Toss everything together, and serve with a little more lemon zest scattered on top.
